豊かな水と優しい風に囲まれた、
日本酒のドメーヌ 根知谷

根知谷は山間の小さな谷。上流には日本百名山の雨飾山と根知駒ケ岳が聳え、冬の豪雪は酒造りに適した、柔らかな地下水をもたらします。また、昼は山に向かって爽やかな風が吹き上げ、夜は反対に吹おろします。夏には稲を日中の暑さから守り、米作りに最適な寒暖差を生み出します。

Nechidani is a small valley. In the upper river, Mt.Amakazari (one of 100 famous Japanese mountains) and Mt.Nechi-komagatake provide clear soft groundwater from heavy snow in winter that is just perfect for sake brewing. Also cool breeze in summer gently blows up to the mountains in daytime and blows down to the valley in the night. Such conditions efficiently work on the paddies and make temperature variation even more favorable for rice plant.

2003年に始まる自社栽培。苗作りから収穫まですべて自社で行い、無農薬栽培にも取り組んでいます。根知谷の気候風土を知り尽くしたスタッフが育てる、新潟独自の酒米「五百万石」は柔らかい味わいに。「越淡麗」は切れのある口あたりへとその姿を変えます。

We started to grow sakamai (sake rice) in 2003, totally self produced from seedlings to its harvest and working on organic cultivation too. Staff here who know the local climate and the natural features thoroughly, raise Niigata's original sakamai 'Gohyaku-mangoku' to be pleasantly soft aroma and 'Koshi-tanrei' becomes sharp yet fresh taste as brewed.
